I’m happy to share with you this surprising recipe that involved raw chicory and vegan bechamel sauce. Yes, that’s right, a bechamel sauce that doesn’t contain any butter, flower or milk and yet feels and taste like a bechamel. In the matter of 10 minutes, dishes included, you will get a nourishing raw lunch with ingredients that kept all their integrity nutrients and vitamins.
All you need to prepare this delicious dish is:
- A power blender
- 1 cup cashew nuts
- 1/2 cup water
- Grated nutmeg to taste
- Black pepper to taste
- 2 chicories
- 1 celery stalk (optional)
- 4 walnuts (optional)
1- Wilt the chicory
Slice the chicory and put it in a bowl with a little salt. Gently mix with your hand the chicory to let the salt wilt the chicory. The volume will drop by half and it will lose a lot of water. While the chicory is wilting, cut the celery and prepare the nuts.
2- The bechamel sauce
Put in the blender the cashew nuts and the water. Blend a few minutes until the cashews become a very smooth cream. add to taste the nutmeg and pepper.
3- Dress the plate
Gently squeeze the water out of the chicory and put it in a plate with the sliced celery and walnuts. Add the sauce, mix and enjoy!
Tip: you can add more or less water according to the desired thickness of the bechamel. You want is warm? Simply add boiled water during the making of the sauce.
