This is one of my favourite salads, I prepare it very often – sometimes with chicken, sometimes with king prawn, and sometimes without any meat. It has a lovely taste and I love the mixture of the different structures. This is the best recipe if you want to eat something quick, or if you want to amaze your dinner guests with minimum effort.
Ingredients (serves 2):
- 200g chicken breast, cut into cubes
- 4 slices of bacon
- half red onion, thinly sliced
- 1 lettuce, chopped into bite-sized pieces
- 3 tbs. mayo
- half tsp. mustard
- juice of half of a lemon
- salt, pepper, garlic to taste
- parmesan for serving
- 2 slices of bread, cut into small pieces
- olive oil infused with herbs
- 2 eggs, cooked
First, mix the lettuce and the onion, put it aside. Season the chicken breast cubes with salt, pepper and garlic and fry them in olive oil. Fry the bacons as well and fry the bread croutons in the herbal oil too. For the dressing, mix the mayo, mustard and lemon juice, season it with salt, pepper and a bit of garlic.
Mix the salad with the dressing, add the croutons, the bacon and the chicken, and sprinkle it with parmesan cheese and finally, add the cooked eggs.
You can add anchovy as well, if you like – I don’t use it.
