I really like cream soups, they're so versatile and you can spice them however you feel like. This curried carrot cream soup is one of my favorites. Ingredients: 500g carrot 5 cm ginger 1 yellow onion 200ml cooking cream 500ml vegetable stock salt, pepper, curry powder to taste I cleaned and chopped the vegetables. I fried the onion in a spoonful of olive oil and once it became translucent, I added the ginger and the carrot and fried them for a minute. I added the hot vegetable stock, half tbsp. curry powder, salt and pepper and I let it [...]

Pasta alla Norma

By |2021-02-04T16:53:25+01:00December 5th, 2020|We cook|

Most recently we eat way less meat and we have more vegetables on our plate. I found this Sicilian pasta dish while searching for an eggplant recipe. Pasta alla Norma is an iconic dish of Catania, the name refers to Bellini's opera Norma. Legend says that when an Italian author tried it for the first time, he shouted "This is Norma!" referring to the perfection of the opera. I wasn't there to confirm this legend but I can say that I had the same feeling when I first tasted it. It's simple to make, but having good quality products [...]

Manda Brasa is a one man business making delicious Brazilian snacks and sweets. We recently introduced his treats as additional products to our baskets. It has been a success so far! Let's discover Bartos' story... Where I’m from I’m from a place in Brazil where people deeply appreciate the culinary traditions of our ancestors. The recipes are passed down from grandparent to parent to child, preserving our culinary identity. If you don't have much time until the guests arrive, I can recommend this tarte tatin-like upside-down cake. The somewhat sour apple and the sweet caramel is always a good pairing. If I were you, I'd serve it with vanilla ice cream. Ingredients: 4 eggs 8 tbsp. sugar 5 tbsp. oil 10 tbsp. self-rising flour pinch of salt half teaspoon cinnamon handful of raisins and almonds 2 large apples (not too sweet ones) cut half and into thin slices 180 g sugar 70 g butter Mix the eggs and 8 tbsp. sugar, add the oil, flour, salt, cinnamon and [...]

Gobi Manchurian is an Indian Chinese fried cauliflower dish and my first attempt to convince my husband that cauliflower can be tasty. It seemed to be a mission impossible, but I'm glad to say that he likes it! From now on, it won't be only a staple of the Indian Chinese cuisine, but also our kitchen too. I had to prepare it three times already! Ingredients: Batter: half cup of plain flour 2 tbsp. cornstarch 1 cloves of garlic, pressed 1 cm grated ginger 1 tsp. chilli powder 1 tbsp. soy sauce salt to taste water 1 cauliflower, cut [...]

Chocolate and orange pulp cookies

I was always struggling, what to do with the pulp after cold-pressing the fruits. I felt it's such a waste to simply throw it out to the compost. So I did some research and I was happy to see that I can still use it instead of throwing it out! So next time you cold press your oranges, don't throw out the pulp, bake some cookies instead! Ingredients: 200 g orange pulp from the juicer (mine contained some ginger too) 200 g flour (try mixing almond and coconut flour, they taste great) 4 tbsp. unsweetened cocoa powder a pinch [...]
