Pies are common dishes in the US, you can add literally anything to them. This time, I used my sweet potatoes from the box to create this hearty dish. It is great for lunch and dinner. You might want to serve it with some salad, to make it a bit lighter.
- 300g ground beef
- 2 sweet potatoes, cut into 2x2cm cubes
- 1 onion, chopped
- 1 jalapeno, finely sliced (not necessary)
- 2 cloves garlic, finely chopped
- 60 ml water
- half tbsp. mustard
- half-half teaspoon ground cumin, paprika powder, peppers and oregano
- 1 teaspoon chili powder
- salt to taste
- 1 cup shredded cheese
- 1 package pie crust or puff pastry, if you can’t find pie crust
Cook the sweet potatoes in salty water for 5-10 minutes, until they are soft.
Preheat the oven to 180 Celsius.
In a large pan, fry the onions on oil. Once they are translucent, add the garlic and fry it together for a few seconds. Add the ground beef and fry it well. Add the jalapeno, stir it for a minute, then add the water and all the spices. Cook it for another 5 minutes, then turn off the stove, and mix the meat with the sweet potato and the cheese.
Roll out the pie crust (you need 2 round pieces) and put one of them in a pie form. Add the filling and cover it with the remaining crust. Pinch the edges of the two pie crusts together, cut a hole on the top of the pie (it is necessary, otherwise the steam can’t leave). You can also apply egg wash on the pie, if you want, but it is not necessary.
Cover it with a foil, and bake it for 45 minutes. Remove the aluminium foil towards the end, let the pie get a nice, golden brown color. Remove it from the oven and let it rest for 10 minutes before cutting it.
