Most recently we eat way less meat and we have more vegetables on our plate. I found this Sicilian pasta dish while searching for an eggplant recipe. If you don't have much time until the guests arrive, I can recommend this tarte tatin-like upside-down cake. The somewhat sour apple and the sweet caramel is always a good pairing. Gobi Manchurian (Manchurian cauliflower)

Gobi Manchurian is an Indian Chinese fried cauliflower dish and my first attempt to convince my husband that cauliflower can be tasty. It seemed to be a mission impossible, but I'm glad to say that he likes it! From now on, it won't be only a staple of the Indian Chinese cuisine, but also our kitchen too. Chocolate and orange pulp cookies

I was always struggling, what to do with the pulp after cold-pressing the fruits. I felt it's such a waste to simply throw it out to the compost. So I did some research and I was happy to see that I can still use it instead of throwing it out! So next time you cold press your oranges, don't throw out the pulp, bake some cookies instead!
