This French-Guianese chicken stew needs lots of ingredients but it worth the hassle! This creamy, spicy, aromatic dish is great for big family events. It needs a special spice mixture called Colombo spice mix, but you can make your own and if you prepare a big batch in advance, you'll always have some when it's needed. Ingredients: 700g chicken cubes/chicken thighs and breast Marinade: 1 shallot onion, finely chopped 4 garlic cloves, minced 1 tsp. ground coriander seeds 1 tbsp. white wine vinegar 1 cup water 3 tbsp. Colombo spice mix: 4 tsp. curry 1 tsp. ground mustard seeds [...]

Spicy roasted pumpkin soup

By |2021-02-21T12:33:22+01:00February 19th, 2021|We cook|

I have to admit, I didn't particularly like pumpkin until once I mistakenly took pumpkin soup at a dinner. Since it was already on my plate, it would have been rude to refuse to eat it so I tried it. Fortunately, the chef was generous with spices and I had to realise that the soup was delicious. Since then I prepared it already several times, and my family loves it too. Ingredients: 1 pumpkin, peeled, cut into larger slices, seeds and soft parts removed salt, pepper, olive oil 4 cloves of minced garlic 1 tsp. grated ginger hot pepper [...]

This is one of my favourite salads, I prepare it very often - sometimes with chicken, sometimes with king prawn, and sometimes without any meat. It has a lovely taste and I love the mixture of the different structures. This is the best recipe if you want to eat something quick, or if you want to amaze your dinner guests with minimum effort. Ingredients (serves 2): 200g chicken breast, cut into cubes 4 slices of bacon half red onion, thinly sliced 1 lettuce, chopped into bite-sized pieces 3 tbs. mayo half tsp. mustard juice of half of a lemon salt, [...]

Pique macho

By |2021-02-05T21:11:28+01:00February 5th, 2021|We cook|

Pique macho is a famous Bolivian dish. It was born in Cochabamba, at Restaurant Miraflores. Legends says that some hungry workers entered the restaurant right before closing time, and requested "anything edible". The restaurant owner served them this dish telling that whoever eats the whole plate, that person is a macho. Ingredients: 350g french fries 1 slice of beefsteak 2 beef sausages 3 boiled eggs 3 big tomatoes 2 onions 1-2 chili peppers, depending on how much heat you can handle salt, pepper, garlic and cumin to taste Cut the steak into smaller cubes, slice the onions and the chili [...]

Grape Chutney

By |2021-02-04T16:42:52+01:00February 3rd, 2021|We cook|

This grape chutney is great if you don't feel like eating raw grapes or they are not sweet enough. It is great with cheese and crackers. This version contains lots of alcohol, but you can substitute it for water, orange or grape juice. Ingredients: 2 boxes of grape, washed and cut half 1 tbs. olive oil 3 shallots, chopped 1/3 cup bourbon or other whiskey 1/4 cup fruit vinegar, cranberry or apple or something similar 1 cinnamon stick 1 bay leaf, or 2 smaller 1/3 cup sweet red wine Heat the olive oil and fry the onion gently, until [...]

This amazing Finnish recipe is one of my favourites during wintertime. It is such a simple yet complex dish, with so many flavours in it - I can't get enough of it. Ingredients: 1 cabbage (I used the pointed white cabbage from the box) cut into bigger squares 250g rice (stickier, or porridge rice preferred) 300g minced meat 1 onion, diced salt and pepper to taste 150 ml dark beer 2 tbsp. dark syrup (agave syrup or molasses works too) lingonberry jam or sour cream to serve Fry the cabbage on a bit of oil. Salt it. Once it [...]

Caramelized fennel-onion pizza

By |2021-02-04T16:49:35+01:00January 15th, 2021|We cook|

I could eat caramelized fennel and onion all the time, but it is way better on a pizza. It takes no time to prepare it, and it is delish! Ingredients: 1 store-bought pizza sheet, or homemade pizza dough 1 bigger fennel bulb, thinly sliced 1 large onion, thinly sliced 3 garlic cloves, thinly sliced 1-1 tbsp. sesame oil and olive oil 150 g pesto grated cheese, as much as you like (we use a lot) salt, pepper, thyme, oregano to taste The recipe couldn't be more simple: caramelize the fennel, garlic and onion slices on low heat in the [...]

Pies are common dishes in the US, you can add literally anything to them. This time, I used my sweet potatoes from the box to create this hearty dish. It is great for lunch and dinner. You might want to serve it with some salad, to make it a bit lighter. Ingredients: 300g ground beef 2 sweet potatoes, cut into 2x2cm cubes 1 onion, chopped 1 jalapeno, finely sliced (not necessary) 2 cloves garlic, finely chopped 60 ml water half tbsp. mustard half-half teaspoon ground cumin, paprika powder, peppers and oregano 1 teaspoon chili powder salt to taste 1 [...]

Minestrone soup

Minestrone is a hearty Italian soup containing the most delicious vegetables. It is cooked differently in every household because its original purpose was to use the leftover vegetables. It contains pasta, and beans as well for proteins. I really like it because it's easy to prepare and I can save the leftover veggies. Ingredients: 1 red onion, chopped 1 celery, cut into smaller pieces 1 smaller zucchini, cut into smaller pieces 1 carrot, cut into smaller pieces 1 can of beans 3 tbsp. olive oil 1 can of tomato cubes in tomato sauce 1,5 litre vegetable stock 200 ml [...]

Curried Carrot Cream Soup

By |2021-02-04T16:52:14+01:00December 11th, 2020|We cook|

I really like cream soups, they're so versatile and you can spice them however you feel like. This curried carrot cream soup is one of my favorites. Ingredients: 500g carrot 5 cm ginger 1 yellow onion 200ml cooking cream 500ml vegetable stock salt, pepper, curry powder to taste I cleaned and chopped the vegetables. I fried the onion in a spoonful of olive oil and once it became translucent, I added the ginger and the carrot and fried them for a minute. I added the hot vegetable stock, half tbsp. curry powder, salt and pepper and I let it [...]
